 This is a really quick, throw it all together, use up that sad mango in the fridge kinda meal! Inspired by my own sad mango in the fridge, and my craving for Thai food, tonight I whipped this up and it was so good I wanted to share! I used dried herbs as I didn't have fresh, but you could definitely use the fresh if you have them! I also added some toasted cashew nuts on at the end (but forgot to photograph them!)

These are my go-to when I need a sweet treat. And, because they’re stored in the freezer, its easy to make up a big batch so you can grab one when the sugar cravings hit!

They are quite rich, so I chop them up fairly small, into 2″ squares, and I find this is always enough!

The process involves three layers which are then frozen. Easy peasy!

Base

  • 200 grams cashew nuts – you could use any kind of nuts but I love a cashew!

As today’s smoothie was so pretty and matched my flowers, I wanted to share it! This is such a simple recipe but tastes amazing and is really good for you, with the addition of the chia seeds and acai powder.

Ingredients

  • 400ml Almond milk

  • Half a Frozen banana

  • 100gr Frozen berry mix

  • Big handful of spinach

  • Teaspoon of Acai powder

  • Tablespoon of Chia seeds

  • Teaspoon of raw cacao powder (optional but tastes really good!)

Pulled Jackfruit Chilli

If you’ve never had jackfruit before, then you definitely need to try it now! You can buy it online and it comes in two forms, young and ripened. The young jackfruit tastes savoury, and is what I’ve used here, and the ripened is a sweet fruit used in desserts. I buy this canned from Amazonhere
