Recipe - Mango Tofu Fried Rice
This is a really quick, throw it all together, use up that sad mango in the fridge kinda meal! Inspired by my own sad mango in the fridge, and my craving for Thai food, tonight I whipped this up and it was so good I wanted to share! I used dried herbs as I didn't have fresh, but you could definitely use the fresh if you have them! I also added some toasted cashew nuts on at the end (but forgot to photograph them!)
Serves 2
150 grams brown rice
1 block tofu (I used Dragonfly plain tofu)
1 large mango
Handful mange tout (mine were from the garden!)
4 small shallots
1 fat clove garlic
4 cherry tomatoes
Dried ginger, approx 1 tbsp
Dried coriander, approx 1 tbsp
Chilli flakes, approx 1 tsp, more or less depending on your preference
1 tbsp Sriracha
2 tbsp soy sauce
Basil leaves, torn
Juice of 1 lime
Cook the rice according to the instructions. Fry the shallots and ginger with the spices. Slice the mange tout and add to the pan. Add the Sriracha and the soy sauce. Cube the tofu and add to the pan, cook until the tofu is slightly brown. Slice the mango and add with half of the lime juice.
When the rice is ready, drain and add to the frying pan. Mix everything together and allow it all to get sticky and a little crispy, this will only take a few minutes. Serve with the basil leaves scattered on top and the remaining lime juice squeezed over.
Dinner, done.
